Peruvian Ceviche: History & Tradition
Fresh, citrusy, vibrant and full of character. Ceviche is one of the most iconic dishes in Peruvian cuisine and one of the best ways to discover Peru's deep connection with the sea.
For many people, talking about Peruvian food means talking about ceviche. But behind this seemingly simple dish lies much more: fresh ingredients, different techniques and traditions passed down through generations.
What is Peruvian ceviche?
In its most traditional form, Peruvian ceviche is prepared with raw fish cut into pieces and marinated in lime or lemon juice, combined with ingredients such as red onion, ají chilli and salt. Depending on the region and recipe, it can be served with different accompaniments and prepared in many variations.
UNESCO describes ceviche as a traditional Peruvian dish made with raw fish marinated in citrus fruits and seasoned with chilli and salt, accompanied by locally sourced ingredients. More importantly, recipes vary from region to region across Peru, creating an extraordinary diversity of ceviches.
It is this combination of freshness, acidity, heat and flavours of the sea that gives ceviche its distinctive character.
Much more than fish and lime
One of the elements most closely associated with ceviche is leche de tigre, or "tiger's milk": the intense and aromatic liquid created during the preparation of ceviche through the combination of its ingredients.
But the final result depends greatly on the quality of the ingredients. Fish, citrus fruits, ají chillies and the other components all work together, making freshness and balance essential.
In Peru, ceviche is not something found only in restaurants. It is prepared in homes and cevicherías, enjoyed as part of everyday life and shared during gatherings and celebrations. The knowledge and techniques involved in its preparation have been passed down through families and communities for generations.
Is there only one type of ceviche?
Definitely not.
Although ceviche is strongly associated with Peru's Pacific coast, it is prepared throughout the different regions of Peru, using local ingredients and giving rise to many regional variations.
There are also different interpretations depending on the ingredients used, from classic versions centred around fish to ceviches incorporating seafood or different varieties of Peruvian ají chillies.
This diversity is precisely what makes ceviche so interesting: there is a shared identity behind the dish, while still leaving room for different flavours and expressions of Peruvian cuisine.
A dish recognised by UNESCO
The importance of ceviche goes far beyond gastronomy.
In 2023, the practices and meanings associated with the preparation and consumption of Peruvian ceviche were inscribed on UNESCO's Representative List of the Intangible Cultural Heritage of Humanity.
The recognition is not simply about a recipe. It encompasses the entire cultural world surrounding ceviche: artisanal fishermen, farmers, cooks, local ingredients, techniques, knowledge and traditions.
UNESCO also highlights the connection between ceviche, Peruvian cultural identity and the knowledge involved throughout the process, from fishing and growing ingredients to preparing and sharing the dish.
